You're not buying a steak.
You're buying the story of Salt Bae. You're buying the performance art of the preparation and cooking. You're buying a dining experience.
Would I eat there at these prices? No.
So I think it's a great example of value added and branding? Yes.
There's some really important take away lessons here for us as farmers.
See the Hawksmoor for another (slightly more economic) example. The branding of the "Hawksmoor Heifer" and the story told in the menu has always stuck in my mind.

yes, I still do buy from an amazing local farm shop / butcher but cosco butchers are also very good for certain cuts and it’s British with provenance - I never knowingly eat imported meat

Yes, getting penalised for oversized animals at the slaughterhouse which then yield 10 giant tomahawk steaks @£630 each and however many hundreds of burgers @£100 each and we say they are the idiots........
