I invested in to set up a venison processing unit, which is inspected and authorised by the council, and I process the carcass myself then sell it direct to the public.
Different way, hard work, but at least works while enjoying butchering too.
I can only speak about our situation and don't really like to start a debate about the crash of the venison market and the possible reasons behind it...
I think it is a personal choice whether a stalker is focusing on clients or venison or both, we certainly try to find a good balance...
