Something to do with blood vessels to the brain. All sheep vessels are in the bottom of the neck, whereas cattle have some top and bottom.

There cattle aren't. They use a process which we aren't allowed to use over here. So the majority of halal beef here comes from over there.

100% of kosher is non-stun.

At the AHDB meeting I went to it was stated that 90 some odd % of halal is pre stunned. As long as the animal has the ability to regain consciousness after the stun then it counts as being acceptable for halal.
