all joking aside good on yer. for thinking outside of the square
mutton hams etc are also something to look at need finer grained meats. I feel for that
there is more to lamb than just a chop or a roast alot of markets out there
Do you think the primitive breeds would work for mutton hams as they carry less fat and are a finer darker meat ?

Well, I have just received mine, got it straight in the pan and tasted it completely on its own
The verdict: Probably some of the best if not the best bacon, I have eaten, the grain is good
it's not tough or dry, the salt content is perfect IMO and lovely flavor. also, I think they got the thickness just right, Just need to taste the smoked version now :)

some thing. crossed my mind. I think there is a Finnish smoked mutton ham can't recall the name of it think it was hung in the. chimney of the house guessing. would not want to burn. treated off cuts

also dry. cured. hams think they do. them in Italy

yea did kinda look in to it a bit. few years ago. did not do any thing tho was. thinking there is a better return in cured small goods hams. bacon salami etc etc and. boil down bones for broth

tends to be finer wool finer. grain in the meats ie. English long wools vs merinos the merino makes for a better ham
Most of the northern primitive sheep breeds have fine wool and carry little fat but will be a very different carcass to a morino I would guess. Never seen a morino in the flesh but they look a big boned sheep that will run to fat like a Dorset I guess ?

a few are bigger boned but most lighter in frame don't see too many with alot of fat on them they will get a covering but not like a Dorset
