How is the border between the EU and Switzerland maintained/policed?

By going through one of these and as Switzerland is in Schengen so it's not as arduous for EU citizens.

Good old fashioned customs posts and yes the border will be easily bypassed by those who wish to profit illegally (and allow migrants through) but cause havoc for legitimate business.

The EU will fund Ireland if it needs resource for a border.

The EU has no option but enforce a border in the event of a no deal, as every non EU country they have a land boarder with will kick off about discrimination and being unfairly penalised if they don't.

You mean an independent ROI along with the rUK would be a far bigger win win for all of the British Isles.
It'll happen.
Of course it'll happen. Euroscepticism is on the rise in Ireland, they've had their European money and transformed the country but now that they're paying more in than they get out things are changing. Varadkar and Coveney are EU puppets, they're doing what is best for the EU not what is best for Ireland and it'll come back to bite them. Ireland's next EU related referendum will be interesting.

Not getting those vibes down here, Mick Wallace was, as far as I could make out, the only semi Eurosceptic standing in the EU elections. He's strong on reform but didn't go so far as to talk about withdrawal.

There won't be any reform, the EU are on a path that won't be altered. Once the people see that there's no chance of reform and they feel like they're putting in more than they're getting out the calls for withdrawal will get stronger. If Brexit is a success you'll have The Irexit Party on your ballot papers

Well the success of Brexit has been enough to convince all the other right-wing, populists and fascist parties that leaving the EU isn't such a great idea after all.
