On the heel catching thing, could you not (once the cattle are in) slide a bar across the back about 2ft from the rear gate and about 3ft off the ground?
That would nudge them well above their hocks before the rear gate could catch their heels. A bit like the bar you would slide in behind a cow in a cattle crush.
