Just wondering what sort of output one these would it have in a good crop of wheat? And is there anything that I should look out for when I'm looking at one?

40t/hour is a good average. A machine that age will have the old chopper which isn’t the best. The 30ft + headers of that era had a tendency to split the intake augers. Other than that not a lot else. Good machines.
