why is it when all plough or cultivation manufactures demo kit like this video there is nothing to bury in that field and soft earth that a hand hoe can make a good job

To be fair to Amazone its their own demo plot, in the corner of the shot you can see some cover crop, which it dealt with easily, it was bottomless sand, ploughed at about a foot deep couldn't have been easier really, bit I completely take your point.

Been told that plough has been working in Aberdeenshire since early this year and making a good job in tough conditions in some tough ground

When you organise a demo day there is always the risk of the weather not playing ball, on light land you can often run whether it has rained or not, with heavy land you could end up canceling the day which no one wants to do after often months of planning, so it is much safer to use easier going land, you usually get an idea of what the machine is like and if your land is heavy you can organise an on-farm demo from there. I get where you are coming from with your point though!
The Amazone day is on sand as the land surrounding their HQ near Doncaster where the event was held is just that!
