It is a difficult market to secure rate. The best thing is to to agree a rate and get it signed off same day to avoid any delays. Some suppliers are changing their prices up to 3 times in 24 hours so you have a small window to agree that rate. The energy market is currently in a terrible state...

It's unfortunate, the best way is to look to mitigate as much as possible, have you looked at solar options? I would always recommend longer term fixed contracts as cost just keep rising.
