1st wheats and cover crops

As someone who gets contractors in to do most jobs, I'm thinking of a 1st wheat / cover crop rotation, cant make break crops pay after contracting fees, so why bother with them if cover crop costs little to establish and look after, captures n and breaks take all? What are peoples experiences? And with 12 months of what is basically setaside with a ground cover what species would be best for such a long period fallowed?

I'm considering similar things but with two consecutive cover crops and grazing them off with sheep in winter and cattle in summer to get some income off the covers.

I would think in your case you would want to max out on legumes to reduce your nitrogen bill.
