As long as you can receive or make calls why does it matter, EE can't even do that now, O2 has improved to a point that it works everywhere, (I go ). My phone is duel SIM, got O2 and EE Sims in it,. But EE is unusable now , and not just me , common problem I hear.

Hasnt EE been taken over by BT now. Maybe that has something to do with it !

anyone notice that their 4G is no where near as good as it was.

Most phones will be using the 4G network (where available) now, so the bandwidth is shared between more users. The 3G network will have less phones sharing the band width now, so should be better than it was a year or so ago.
4G will likely get better as 5G is rolled out, as al the ‘must have the latest phone’ lot move over.
 
It's people like me stuck down a remote valley who are probably not helping by using it for streaming Netflix etc. No sign of fibre Broadband despite promises from the Welsh government that we'd all be conncted by now.

So whilst I have no 4G signal inside the house an external 4g aerial and a secondhand Ebay 4g router (with a £20 pay monthly unlimited data phone card) means that I can now get a consistent 50Mbs (or more)

That’s pretty good. You could probably get better upload speed with a better gain (directional) antenna aimed at the mast. But does it matter, your download is fine. Ping a little high, but not concerning. You could run VoIP over that fine.

It is a directional aerial as there is only one mast to get a signal from 8 miles away.

Thats impressive. My FTTP runs at 70Mbs, copper being disconnected today will be VOIP only.
