im going to put up a 30ft x60ft with 8ft overhang, would i get away with using 7x4 rsj? or would i need to go bigger? and what would be the best way to do the overhang have it just bolted on at the end of the eave or just have is as part of the raffter with the stancion bolted underneath

7x4 may work ok as long as you have a good haunch detail as this is the point of maximum bending. We used a 10x6 for a 13ft overhang with the rafter running over the top and a haunch either side as per picture
