I am assuming you are coming from a country very much hotter than the UK :)
All fresh herbs will need putting straight into a chiller if you need to preserve the very fresh appearance in a hot climate.
Take them out of the sun , and if no chiller available place the cut stems into water, if possible.
otherwise box and place in the coolest place you have

They need to go immediately into a vacuum cooler. What sort of quantity are you talking about (picked per hour and per day)?

If they are harvested early morning and covered in dew/moisture, then they can go straight into the vacuum cooler. If leaves are dry, then they need spraying with water first.

I can put you on to the right person, but they are very expensive machines, so need to be doing several pallets per day to make it worth having a machine. You'd be looking at approximately £150,000 - £300,000.

Leaves are cooled to 4 degrees C in about 20 minutes.
