Saddleback/large white bred, type pigs here.
Sell all my gilts, except a few to retain for breeding, as store pigs, cos as said, boars have an immediate excuse not to pay the going rate/value.
Finish and kill most of the boars at 70 to 80 kg live wieght. Slower growers are probably up to nine months. Dont push them too hard. Leaner than gilts and have never had any negative feedback or noticed any taint myself.
Bacon comes from farrowed once or twice gilts/sows.
Really want to get into a system of once farrowed gilts for all kills, sell most piglets except a few breeding gilts (to replace the ones killed) as weaners/stores and not have any older pigs on the place at all.
