Note I have made no comment about hi fat diets
My interest is cycling, training my body to unilise body fat so I don't need to carry pocket fulls of food with me , the fat one is interesting, It don't seem to trigger insulin so you can lose weight on a high fat diet , I'm just reading this so excuse me if it's completely wrong , my personal view is that high fat diets can be dangerous to your health , mine especially, family history ,
Well you’ve done well to avoid the usual 20th century results that google brings up immediately. Your comment about being ketogenic amused me earlier in the thread, as the majority of people on keto are actually eating more fat than they were before and losing weight as a result. Going back in time as you’ve looked at, humans used to value the fatty organs/bits of meat more highly than the lean bits of meat.

Anyway, no matter, what you’ve described as your diet previously is low carb and no processed crap so you‘re avoiding the bad stuff from the sound of things. It’s your particular take to avoid saturated fat, your choice, not worth arguing over. Sounds like you’re avoiding industrial seed oils too as much as possible so that’s the real benefit. Of coirse, losing weight and eating to look after your heart and health aren’t necessarily the same thing. The venn diagram circles can merge but often don’t.

Eating to lose weight is certainly not healthy if you go onto a high fat diet to do so , I have no problems losing weight when I put my mind to it although I'm sticking on the last 5 lb, Christmas did not help , I just need to put the bits together to find out how I lost weight , but it hovers around low Processed Carbs / Sugar's,A lot of Cycling and eating carbs don't work for me, , don't lose an ounce , I will pas on fats and stick to my doctor's advice , If I was 30 years younger then maybe I would challenge his view

Why is ultra processed a bad thing?

We grind wheat to make flour - a process
We fortify the flour - another process
We bake bread - another process
We toast bread - another process.

Is my toast ultra processed?

If it's white you take the fibre out , eat wholemeal you be fine , another example , jacket spuds , mum always said eat the skin, the goodness is in the skin , I assume the fibre , I tell my kids, they just laugh at me
Anything that uses fine white flour is in the bad list in my book ,
I've found the secret to my coffee addiction , if I put more milk in which is a more natural source of sugar I don't crave to put processed sugar in

You’re stuck on that bolded and that’s your choice. The actual research and correct interpretation of the data don’t back it up however. But hey, I think that horse died a while go so let’s move on. Most people can lose weight if they try but that doesn’t make it healthy, because they invariably go right back to eating what made them fat in the first place. You can’t outrun a bad diet, it’s boring but it’s true.

Those are basic processes. This is one of the problems with the NOVA classifications for different levels of processing. NOVA has industrial seed oils in category 2 but homemade bread and salted nuts in category 3. Category 4 is ultra processed food. Industrial seed oils are a big part of the problem with processed foods, and there they are in category 2.

I've never seen this explained so clearly before so thought I'd share it here:

Another interesting snippet here: a paper linking Covid 19 with high heart attack risk. I can't see how it would fit the cholesterol hypothesis but it would fit the thromogenic/inflammation theory of heart attack/stroke causes.
