Lamb cutting is simple and used to take me about half an hour for straight cuts, chops etc.
Pigs can take 2 to 3 hours depending on what is wanted, and the size of the pig. This does not take into account sausages, burgers, bacon etc, and argueing with the pig owner that they cannot have all chops and back bacon from the same pig. All the fiddly bits like sausages, burgers and curing can take a good few hours on top.
A beast takes all day, and there is a great deal of lumping heavy weights about, and a fair bit to mince, dice etc. to either pack or make into something.
If you get two full length tenderloin back from the pig, you have a good butcher. I used to knock a bit off it the client was willing to pack and label "so you know what you have got in each bag". :)

No, down to one independent within a hours travel that will do private kill.

Someone who works there is local to us and does the butchery, he's a chiller etc at home so we collect from him, he does an excellent job, can do sausages and bacon etc too
Could ask where it is you take them? Less and less places to go these days

Always worry about getting back what was taken in. Is that a fair concern?
I think it's a legitimate concern, we've had the odd one go 'missing' and another swapped by a third party butcher, the meat trade, I'm told, is full of rogues.
All you can do is find one you trust and pay them fairly for it. We use one who isn't that local unfortunately, but the service is spot on, we get our own animals back without a doubt and everything is done just as we ask for. Looking at some other prices being mentioned here they might not be the cheapest but we are very happy using them.

Back when there was still a slaughterhouse in town, smaller butchers would buy a little Steer or Heifer which suited their customers needs and send it in to kill.

When it came to collect though, one or two were known to try it on, they'd take their own carcases off the hanging rails but then try and take the plucks of a much bigger animal belonging someone else.

I wouldn't worry about the pluck too much.
It's the old fella who can trim the skirt and substitute it for your fillet who's the bigger problem.
