Over here I thing seed savers might be worth a try. Their objective is to protect and restore some of the old varieties of plants grown long go , from veg to fruit trees not entirely sure about cereals but you never know
 
I would like to grow a couple of milling varieties, only an acre each. Either spring, or I will take a risk and try and get a winter variety in as soon as I can.

Frankly you've missed the boat this year. There is no quantity of any spring seed yet still a couple of years away and the heritage wheats are true winter wheats and you've less than a 25% chance of getting them vernalised now. I'm getting a bit worried about mine that have been in for months, I can count the number of frosts on one hand and it's Christmas!!!!
Anything planted today won't start counting for a month so I think it's best to plan for next year.
These wheats are not anything from living memory so even if your granddad planted wheat in 1950 in January that ain't heritage wheat proper.
Keep In touch and I can sort you out some next year but no-one can SELL any seed not on the common list so you need to be invited onto a 'participatory breeding scheme's although change may be on the way.
They don't bake like a modern even at 16% protein, won't yeild more than 25-30cwt and fall over easily. Conversely they need very little to eat and can (can) tolerate high weed burdens.
