Header starts rocking side to side as soon as the sensors come in contact with the ground.

Potentiometers are both fine and reading perfectly over their full range, autolevel combine calibrates perfectly, header is zeroed at both top and bottom of sensors travel and reading perfectly on the screen. Everything working as it should except when the header sensors contact the ground.
Switch off Autolevel header and it slaves to the combine sensors perfectly, switch it on and it dances left to right trying to over correct itself.

Any ideas?

Had similar on 7256 and was a little stone stuck in ground sensor linkages. Assume the fact you have checked potentiometer travel that everything is clear in it.
Other things could be burst accumulator for levelling circuit, bad connection somewhere or a chaffed wire. Worse case scenario computer has developed fault which means a trip to David King to sort. Not familiar with the DV1 set up with regards to input diagnostics, certainly on DV2 quite straightforward.
Gordon at Balgownie might have some advice as he has worked on them over the years.
