is this the style they are or is there another version ??

on our little 35x here the caps leak periodically and need new gaskets but the caps on mine are flat and I assume what's left of the centre bit is rattling in the head port

Poor quality gaskets or go back and retighten when hot. Surface's may not be flat, worth checking?

everything is fairly flat,i think the center bit has broke loose and causing more pressure on the gasket??

Yes should be all one piece and the carbon from the combustion chamber helps seal the joint.
