Quite obviously if the "requirement" for more vets is needed from the UK then the "requirement" for more vets is needed from the EU.

This is a hypothetical argument based on timing .. if neither were able to meet the "Demands" then obviously a compromise would be made.

If it was a question of animal welfare then obvously the current trade is inhumane .. which it isn't.

I thought the situation is that UK trained vets do not like a career checking carcasses in abattoirs, preferring to look after small, fluffy dogs and the owners in suburban vets practices and sell pet insurance.

The reality is, that UK vets would find it very difficult to maintain a practice based on large animal farm work only.
Especially now that they have lost a lot of routine work that "globalised" practices have tendered for and won, such as tb testing and probably abbatoir work at cut throat rates, whilst employing cheap foreign labour to carry it out.

You have to remember UK vets train for 7 years whereas Spanish training being more specific can result in a qualification in 3. They are qualified for meat inspection but cannot do all animal work a UK vet can do
