An opportunity to fit some insulation at the same time? I'd counterbatten so the roof finish will be about 25mm higher if you are up for this.

OR whilst you have exposed the rafters you can infill with rockwool or rigid board such as Kingspan or Ecotherm as well then relax as your winter fuel bills plummet!
Just some ideas.

Ring a good roofing co for quotes & make sure things like the soakers & flashing are done properly. Unskilled omit soakers & that's a disaster waithig to happen. If you've exposed verges consider modern clips as the regulations have been upped to cater for a 120MPH wind factor & often just using mortar isn't enough to keep things in place.

Screw or nail every sixth row if the tiles are 6" x 10" items again this will help exposed elevations.

You'll have to get a 'Scaff-tag' on the scaffolding to cover any public liabilitty responsibilities. Remember there is usually a hire charge after a month of it being up.

done a good few double roman roof tile roofs lately with a local builder I don't know prices but for 4.5 - 5 packs of tiles it takes 3 of us really going for it to strip and felt and lat the whole roof on day 1. (if there's a dormer or hipped roof it slows you down no end!)
day 2 we stack the roof out and get quite a lot nailed down, again we can almost finish if there's no dormers or hips! we nail every second row then if you have a problem kick 1 tile up to reveal the nail of next etc.
day 3 cement ridge on etc dry verges are normally done day 2

we don't have a full scaffold unless its a tall house, theyre normally bungalows and we have 1 tower and a youngman onto tipper trailer (old tiles = good hard core for under concrete!)
normally leeving 90% of leadwork only replace whats nackered.

hipped and dormer can take over 5 days!!! <for same number of tiles so bigger property.
