Dad always said 'turkeys are a game bird' and should be treated the same as pheasants, grouse and the like, trouble being the general public buy one once a year and have no clue how to handle it.
They get better with hanging a time with the guts still inside them,no food 24 hours before slaughter so the crop was empty. Once you cut into the bird to dress it is when the best before starts.
Even a well looked after bird can smell inside the cavity, the answer was a paper towel with vinegar and salt on it, wipe it round the inside and the smell went away for a two or three days.
Sometimes a customer would bring one back because they'd got it home and it had a bit of a smell when the opened the bag, simple take it into the back of the shop wipe it round and then give it back to the customer, apologise and tell them you'd exchanged it for one slightly bigger, customer goes away delighted.
Probably couldn't get away with it these days.
