If recent form is anything to go by, the hard Brexit will be plan A up to the eleventh hour, just as herd immunity was plan A in the Covid crisis.
But Boris wet his trousers when it came to crunch time on herd immunity.
My guess is that he didn’t bother to have his trousers cleaned after that, as he knows well that it will be soiled again pretty soon compliments of Mr. Barnier.

Not too sure these far right nutters might just get what they wish .

Exporting meat in any meaningful volume to USA is a pipe dream.
Any trade deal with them, as a prerequisite, demands that the other party to the deal voluntarily bends over. Once that little preliminary is out of the way, you just wait, relax as many muscles as you can, and take whatever comes.
Of course the Brexit pimps who facilitated the whole thing will do what pimps in the traditional sense do. Make money.

I am waiting for somebody to tell me what's in it for the UK? Trading with the US if you are a UK multinational isn't a great problem and most of them have been doing for decades in any event. However, it's a lot tougher for SME's as you have to deal with all the federal R & R and then in may cases individual states R & R making complex, expensive and time consuming. A massive change from just selling to other EU countries.
