I don't think this is a new roof job if the existing sheets have a decent amount of life left in them. Just get a flashing pressed that will lap over the two neighbouring sheet crowns, turned down at each edge to shed any water into the sheet valley and either screw fix down through the original sheet into the purlin or stitch on with lap locks. You may have to take out one row of original fixings if they are on the same edge crown.
Looking on @Tinman Steels Ltd website they do flashings and fixing so I'm sure they could press you up what you wanted.
Please be careful working on the roof if the sheets are fragile, edge protection, youngman walking boards and a safety line at the minimum. Perhaps a local industrial sheeter could assist?
By doing this you will dramatically reduce the ventilation of the shed therefore suggest you use make sure the shed is well ventilated in another manner for the welfare of the beast it is housing.
