Simmental red or yellow

Just got new bull, choice of 3 but went for red one just because I liked him best over 2 yellows, breeder saying Irish won't have yellows, why is this is it just a 'looks' thing or are reds different in conformation or does it just go back to historic breeding, surely coat colour doesn't matter?
 
I aim for red, particularly when crossing with black cattle.

Pale colours are more likely to give you grey/brown which tend not to sell quite as well as some
Darker coloured bulls onto black cows are more likely to result in red or black

Colors tend to make no difference to performance IMO, but like most traits, if it's classed as a priority it may be at the cost of other things.

Decades back the trend was towards pale Simmentals so that their dairy crosses were easy to distinguish from Hereford, but now that are used more for sucklers the trend has been towards red

Gone for an in between one with last purchase.
Bought a couple of dark ones with Irish breeding in them prior to current one and temperament was worse than anything experienced in 30 years of Simmentals before that.

No idea if colour is related to it but that experience has made me wary of the current deep red, almost burgundy ones that are in fashion.

The Irish cattle ard getting more snow more inbred, when you look through the recommended sire list the same few animals keep on appearing.
