We are short on silage but have loads of straw and beet. So would single ewes be ok on this diet and how much concentrates would I have to feed.

I would suggest it wouldn't be great, unless you can strictly limit the quantity of beet. That ration will be desperately low in protein, so they will lamb down with little milk, but reasonably high energy (unless beet limited), potentially giving big lambs. You'll need to put make plenty of mins available too. Worst of both worlds perhaps?:scratchhead:

I'd give the beet to my twins, to save silage with them, and feed some protein (soya?) with the straw.

I'd put singles on the silage only and extend the silage by feeding twins, beet and silage.
Or you could feed some on straw and draff.
