Have a 50k 6920s with the Eco setting that limits the tractor in e4 to 2000rpm what's the easiest way to allow it rev out fully ? Software Changes? I have heard of people removing the speed sensor. Any information would be appreciated

Can you simply recalibrate the speedometer? My 7930 Autoquad used to hunt around 50 kph on the road, with the revs rising and falling at the limit. Autopower boxes seem more stable.

Not really. Braking effort doubles between 30 and 40 kph. Do the maths on 68 kph.
I wouldn't be too concerned about the brakes, prolonging brake like comes down to the driver. A tractor with a 30k box could burn it's brakes out in one day if the driver was bad enough while a 60k box tractor with an experienced driver could last 10+ thousand hours
Until you need to do an emergency stop.
All equally valid points IMO, so depends who will be the driver/screwdriver
