That's called shabu shabu, most of it is good, the egg bit isn't; the Japanese eat a lot of raw stuff, some is alright, some makes me gag. They do eat wagyu in other ways, as a stir-fry, in stews, curries and steaks too - which they general have pretty rare and served pre-sliced so that chopsticks can be used. It can be superb beef, but there is an awful lot of hype around it.In Japan never saw it served as anything but shavings. Had it once served raw which you cook by dipping with your chopsticks into a bowl of boiling broth ( heated over a little burner ) a few seconds in this then you dunk it in a raw egg ( beaten again with your chop sticks first ) and eat without recooking the egg. I was not certain I liked it.
