What's the highest number of categories someone might ordinarily use in one sorting?

Two.
As long as the sheep are running well, I think it's easier to keep focused if shedding 3 ways rather than 2. That's not to say I don't make mistakes though.LOL two ways can be a struggle somedays ! - one of those jobs where you shouldn't let your mind wander - think about what's for tea or what your doing later and you shed one the wrong way and it can all go wrong very quickly!!
The length of race before the shedding gates is most important IMO.
One place I work at has too long a race up to the shedding gate and the sheep have time to pick up speed and are travelling very fast. If you concentrate hard enough you might see one coming that's needing shed off so slam the gate in front of it in the split second chance you get after the last sheep passes, then even faster, you get your arm outta the way (unless you want it broken) as the sheep just flies straight over the top of the gate anyway...
That sounds like me drafting my ewe lambs out for scanning. There are Highlanders, Exlanas, Pedigree Beltex and Pedigree Charollais. All pretty placid and a nice steady flow..... until a Charollais gets to pick up speed.
That’s through a 10’ RAPPA race.
