We were eating Holstein bull! So not what purists would call “good beef”. But it tasted so damn tender i was most upset when I’d finished mine and the wife wouldn’t share hers!the slow cook renders the fat which adds so much flavour to any meat with fat but good steak is particularly exceptional done this way
