I’m looking at buying a 8ft topper; what’s the pro & cons of a fully off set one, as opposed to one that fits directly behind the tractor?

In-line you’ll run some of the grass down before you can mow it. Depending on tyre width it could be 20%+. Depends how tidy you want it to be.
Or drive backwards and hope you remember to avoid the tree stump
 
The in-line flail misses none , it hoovers the grass back up
Not always. The grass is flattened down forwards and the flails are skating over it. Seen some sh!t results,some perfect, but type of flail makes a big difference. A rhino has updraft blades coming back towards the flattened grass and lifts it.
