Transport of meat as hanging carcass.

Have the potential to supply 1 or 2 London butchers with meat, but really struggling with transport.
Everyone we've tried wants it boxed. This is no good if your butcher wants a whole carcass to hang and cut himself.
Anybody do this and know of options?

Still doable if the price is right perhaps? Or buy an old chiller van and take a road trip if it’s going to be an ongoing/expanding operation?

6/7' long pig would need a crate rather than cardboard box! Dulav crate is a possibility, but I think the pig would have to be in 1/4s.
Can you hang in 1/4s?
Certainly considering the route of doing it ourselves, but wouldn't be cost effective until we can get numbers up a bit.

Prime pork isn’t traditionally quartered. Cutting a side of pork into three is more common, giving you 2 shoulders, 2 middles and 2 legs per pig. You will lose some of the magic of buying carcass meat if it turns up in a load of bags in a palletainer though. I can’t see an easy answer.

Where are you getting them killed? We used to use Elliott's @ Chesterfield, carcase delivery was included in killing price.

Have you priced chilled couriers like www.eskimoexpress.co.uk ?

Might be a long shot but it might be worth trying a wholesale butcher such as
Rj Phillips Wholesale Butchers Limited

They will have a vehicle capable of hanging quarters for transport chilled and there is a slaughterhouse at Langford Vet school doing private kills.
The other option would be to hire a vehicle and move it yourself. No butcher I have ever come across expected beef in sides, quarters could be legally moved in a chilled van on the floor provided the floor is clean, no different to moving fresh meat in clean trays.

Is there anyone else in your area doing chilled produce into London?
We are lucky and are close enough to get hanging carcasses in, but in the old days we used to use cloths and lay them flat in a stack.

I used to sell big Dexter 1/4s* to a restaraunt in the SE. I used a couple of BIG insulated cold boxes that we called a coffin, as that was they resembled! About 5-6ft long. Would take a half pig easily. 2 fitted in the back of the pickup under an IW top!

I could take meat from the cold room of my Butcher who had been hanging the beef, and deliver it to London 3-4 hrs later. Temp barely moved in winter, maybe came up 1-2C in very hot weather...




* LW was around 400-450kg for the better commercial types.

Do you have a source for the boxes? Not seen any that long.
Think they would need to be 6'
