Wagyu beef scheme reduces price volatility...

A unique business has been formed which sees dairy farmers, rearers and finishers paid a guaranteed price for breeding and finishing Wagyu cross dairy animals.

Growing demand for Wagyu beef has resulted in Warrendale Wagyu, established by Jim Bloom last year, to develop a system that works on a transparent price matrix based on the growth of the animals, regardless of market price.

The aim of Warrendale Wagyu is to produce consistent, grass-reared animals until 22 months that are then finished on grain by 25 to 28 months.

After seeing the demand for Wagyu beef rise in the UK, Mr Bloom decided that rather than let market demand be fulfilled by imports, he would invest in Wagyu genetics and supply the home market himself.
