Perhaps the crop was not actually as ripe as you expected then yesterday!

And i have never seen Wheat straw go to chaff behind a straw walker combine unless cut very very late in the season.
Again, no idea. Its the less fit crop that you can thrash hard and tight and the straw will come out looking like it went in! The fit barley you slow the drum and drop the concave and it still will come out like chaff. 6500hrs combine driving and none of them on farm simulator 😁.

Something is wrong with either your combine/ the crop ( or both ) this year at this stage in the harvest if you are thrashing the straw to pieces to get the awns off!

Balancing act at the end of the day, straw quality V the awns and you would rather have a clean grain sample which is fair enough.
 
There are good drivers...

And there are bad drivers...
And there's ones that have never done it but know everything. I'll get some pictures for you. Edit, same feild
