Gotta laugh that it's in the Guardian, a newspaper that's taken millions of pounds in funding from "philanthropies" that invested huge amounts of dosh in vegan UPFs.

There is a major difference between processed foods (processing includes cooking!) and ultraprocessed food.I'm not going to get into another argument but bacon, bread, cheese: these are processed foods.
Bacon- loaded with brine to maximises it's profitability. Bread and cheese, also loaded with salt. You can see where I am going with this.
We need to opt for a simpler diet, try to cut down saturates and vegetable oils (fats in general), eat more fibre and avoid highly processed foods.

UPFs keep so well because they are full of additives, which makes you wonder what they do to the gut biome.
How do you do the yeast?We make our own bread, flour, yeast and water - no salt. Also our sausages and bacon have no salt added, though there is nitrate in the bacon. Certainly notice the difference when eating a shop bought sausage.
