How would I delete all mapping/logging data on a trimble 500, 'data management' doesn't seem to be doing it as I'm soon getting another warning about getting full of data ?

Data management is the right place. Go in there and delete coverage for individual fields or all of them but also delete the summaries as well as they take as much or more space than coverage. You can download the manual on Trimble support website. The 500 does not have a lot of storage space.
