Reading this thread it seems to me you have too many milk buyers and small processors, all stabbing each other in the back. Too much wheeling and dealing with spot milk, too much volatility etc.
Would the UK not be better with a couple of big buyers, say Arla and someone else, everyone sign up to them, then let them supply the smaller speciality places with milk, while both keeping a large product mix of their own that they could tweak according to demand.

Even if you could get them all to sign up to either party, a small guy starts bottling milk and offers a penny more they would all start running

Hmm, Quite a few kiwis I`ve spoken too are not too impressed with that idea. Seem to think Fronterra could do better

Don't disagree with that, there's always room to improve. A lot have moved to other suppliers as they don't need to share up (despite what they may tell you a lot were forced to sell their Fonterra shares and sign with private companies by the banks) Fonterra do set the price the others have to stick to if they want supply. Fonterra goes and farmers are at the mercy of the private guys. A lot in more remote areas probably wont get a contract.
Set up a dairy unit in a current milk field and Fonterra have to take your milk (i think that's still the case?) and they cant drop you provided you operate to their standards.
Think a lot of UK farmers would take that.
