Read a bit in the paper about this a few months ago, some food writer was raving about cow beef.

 

[It was already broken.]

A butcher told me that years ago in cheaper areas of Norwich they would only sell cow beef. Prime cattle never got a look in because no one could afford it. So why not. Better than tasteless supermarket chicken.

Best beef out if fattened properly but not every cow will fatten properly . It needs hanging right but will taste far better than a prime animal but you will have to accept to chew it an extra time per mouth full.

Might not be the best for a rare steak or roast but pies, stews casseroles and the like I reckon it would take some beating on the flavour front.

Mate is a chef in London and raves about the older stuff. Think it's quite specialist though. Galician beef from Spain - old retired dairy cows are given 3-4 years of grazing.

The French deem a fat mature pedigree cow as prime beef. Wouldn't entertain something under 30 months.
Remember our supermarkets and processors have dictated to us what is 'prime'.

BSE and EU regulation has dictated what is prime beef. Flavour and texture play third fiddle after bureaucratic rules and gobble and go economics.
