I was going to suggest an electric actuator as used on posh front gates, but the power/speed doesn't fit.
You need a fast operation with low force and some cush? Air would work but is capital and energy intensive with a compressor, valves, pipes and a ram amongst the ewes. Your gate is a simple flip-flop, binary device of say 30 degrees or maybe 300mm of travel. Are you in the hills or near a 13A point? Since 12 volt DC electric motors (with a gearbox) are easily reversible and portable, powerful and fast, they would be a good second choice. The remote control is not a problem by using winch technology of fob and receiver.

How do people get on with air operated cattle crushes etc?

We were going to buy a clipex but found the air operated headstock too aggressive. Either open or closed with no in between. Our current one is oil operated and often just open it slightly or feather controls, which wasn't possible with air.

The air rams on our robot diverter gates have an adjuster screw for dead slow up to bloody dangerous fast

The speed of a double acting pneumatic ram is controlled by restricting the exhausting air upon change-over using a check valve/ by-pass restrictor unit near the ram. Hydraulics restrict the incoming oil.

We were advised to disregard air operated crushes as they hiss loudly and the cattle don't like it. We went hydraulic.
