Arable forage options

I`ve some volunteer oats, mixed with AMG in places .... all in/under the stripped oats straw. Plan is to spray off in spring and direct-drill spring beans which works really well.
As it is cold and very wet since weeks, growth of everything is already limited, even of the grass, so I could become a bit short in grazing this winter - would it be worth to let the sheep in this stripped oats field and let them graze what they find ??
If so, would it be best to do it soon as there is not much more groth to expect and the oats are already starting to become a bit yellow in places, probably because it is too wet and maybe some fungal deseases as well which probably don`t taste good for the sheep !??!

This is a nice and thick carpet of volunteers under the stripped straw, it`s only looking like this in some places, usually far thinner :
