brisket...on cows - what is it? what's it made of? what's it for? just wondering
this is one of my whitebreds, just calved a few weeks, not a big cow

its made out of the floppy hanging down bit there on the neck and any floppy hanging down bits along the sides [ some have more than others, some have none] and the butcher rolls it up. You get quite a bit more brisket back from highlanders. From one beast you get 4 rolled brisket. Its very good from the highland or luing anyway

when I was a lass in Dundee, if we ever had a joint of beef, it was rolled brisket

Oh dear, now you ask! there are as many explanations for their use as there are varying size of them across species.
I sign of sexual prowess, a sign that an animal can appear larger to warn of predators, a way of dissipating heat, I honestly do not think the true function is known.
