Anyone converted a fully insulated ex broiler house for vertical farming use
building conversion into vertical farming

Sorry not much to add.
Only thing I'd say is that vertical growing and glass houses are populating themselves around AD plants. Cheap heat and electricity.
So everyone else will eventually need to compete against these guys. That said, some produce might he high margin to local outlets.
Have you any thoughts on what crop?
Shockingly Fresh maybe worth a call - some sort of start-up advising on vertical growing.
