Depends what the old sheets are made of and how they are fixed. Will the gutters need re-doing too? Are the existing purlins z, or concrete? Is the new roof to be tin or FC. Tin would be the cheapest purely down to labour rates in refitting.

Netting properly with an additional mesh net to stop things dropping (if needed) would cost ££££

If its currently a FC roof then your looking at probably 282 sheets currently on the roof plus the ridges and barge boards, so it's more like 1 week to remove the old one before your stare the new one.
