I'm establishing some 6 m wide nectar mix plots long field margins for my mid tier agreement. Can I include the 2 m cross compliance strip in the nectar mix or do I have to leave it untouched and start after 2 m, thus giving me a 2 m plus 6 m nectar mix?

Latter. The Cross Compliance protection zone (commonly called a buffer strip) is separate to any Stewardship land use - ie in this case nectar plot mixes. Also check with someone that knows but I think it may be a requirement for inspection purposes that the two are identifiable. Someone else who knows more than me will come along shortly.

I am sure you cannot use the 2m strip next to the hedge for a buffer if you have a non crop option between the crop and the buffer because what are you buffering
The 2m strip isn't a buffer in greening terms. It is merely for compulsory cross compliance purposes.
Every year I think I've got the application nailed and every year something new comes up that complicates things.
Think I'll have to buckle up and join the queue on the phone to RPA see if they can help.

to clarify there is a 1 m buffer option between crop and edge of hedge but not between hedge and some stewardship option

the 2 m cc strip is from middle of hedge to edge of crop

That's my understanding & I was pulled up by the RPA last year for claiming a 1m buffer strip as EFA next to a 6m SW1 margin despite 8m for clear width from the edge of a narrow hedge. The management of your buffer strip needs to be distinctly different.

To get back to your original post, I wouldn't recommend using some of your 2 metre cross compliance strip for your nectar mix. You can't apply pesticides or cultivate within that 2m XC strip to establish them anyway.
