Customers collecting produce

sure it has been done(and probably asked) before. I am trying to develop a system where I reliably organise for customers to collect beef products direct from the butcher.

My two concerns being the reliability of the customer turning up at given place at said time, and the honesty of the butcher to provide correct meat in correct way.

The idea being I take the stock to slaughter as usual and don’t see/ tough them again.

Can anyone offer any advice/ experience or point out any further pitfalls to my idea?
