what’s the best way of forming drain channel in concrete. It carries a lot of water so needs to be 500mm wide
 
Set up forms at side at required gradient then attach a former piece to timber or steel that spans forms to pull down length of channel run. Would put guide pieces on former to restrain it moving side to side across forms..

Former could be made from steel or plywood but for 500mm would need to be relatively strong as your concrete mix cant be overly wet when forming as too much slump and your channel will lose its shape. Once forms are set can use it for getting aggregate level correct prior to concrete pour.

Alternate option is to get a piece of pipe and use it as a form then remove once concrete set, 500mm pipe could be expensive however. I assume you don't have depth to put in an underground drain as this is simplest option

Without trying to overthink it surely the answer is a good man with a float (or plural, depending how long a channel). Semi dry mix & form the rough shape when you lay it, finish it as its going off.
