Try the cattle breed society they may be able to help.
We just leave a long slip halter on ours to get them started.

Do what @matty says. Let them walk round the pen on their own with the shank trailing on the floor. They'll tread on it and get used to the 'feel' of it pulling at their head.
Then tie them up in the crush first, so they can't try to get away and smash stuff.
Best if you start them younger - they're not as strong, but you may not have that option.

P.S.... put it on like this......

I teach young horses to lead by tieing a yachting rope (that slides nicely!) to the head collar, then put a couple of turns around a turning post (which is basically, a strainer set firmly into the ground). The horse pulls back but can easily be controlled by one hand on the end of the rope. When they stop pulling, pressure is released. Then pressure can slowly be increased again until they start to pull back again. It is natural for an animal to pull back until learns there is another way. By teaching that the pressure stops when they cease pulling back, they can quickly be taught to lead (or "yield to pressure"). Cattle should be easier than horses as they are smarter but I don't know because I don't train cattle.

Just seen delilah's video. The principles are the same. There's more than one way to skin a cat and the best methods are the ones that work.

As title suggest does anyone know someone in Leicestershire area who would help with this and help with takeing cattle to pedigree sales aswell?
Many thansk
What breed? I'd suggest contacting the breed society and the local breeders club. Many would organise training days (obviously not this year unfortunately), or would certainly be able to point you in the direction of some local breeders who could help.
