How do they work?press the power on button, and the motor runs turning the hydraulic pump. Then other switches control the closing and opening of the press with electric ly controlled spool valves (solenoids) with a stop sensor overriding the closure once it reaches the preset setting. So the motor doesn't have to start under a heavy load?

That is going to need some fairly big inverter and I guess something like a minimum of 50amp feed.
This is going on a 3.5Kw motor, would draw 14.5 amps continuous and 3 times that on starting.
I am no electrician though and others may say that it may need substantially more or less

The motor will start and run with a start capacitor, run capacitor, and a start relay or manual starting switch. No idea if it will meet your high standards though. Nothing to be gained from a VFD that I can see. There are commercial static phase converters that work just fine also, more likely to be "approved".
