Hi everyone looking for an expert I’ve 3 turkeys growing for Christmas, going to weigh them tomorrow see how there doing. Am I right in thinking there about 75% kill out? So a 15lb live weight will give 10lb dead weight.
I would say max 75% kill out. Oven ready (no head and legs) are usually around the 65-70%.
Plan to kill around 10 days before you want them, kill, pluck and hang with the head on, so there is no opening for bugs, then you can gut 24 hours before it hits the oven. This makes the meat much more tender. Keep below 7 degrees while hanging though!
