Have you seen the price of spuds, my man said they gone through the roof with a big smile, just proves what is always dlsaid about farming, to fill the pot you have to ride the storm first and no point bunking out half way
 
when you look at the costs though I wouldn't have rent to pay just a notional rent for 70 acres, no additional labour or tractors

If that is true then you currently have far too much machinery and labour. Have you seen the amount of metal that is required to grow spuds? It is mental, and its not much less for 70ac than it would be for 500.

You could put the potato store up just to the left of the dairy.

i have 3 main tractors for the arable/silage etc that would be used, you can buy fairly cheap second hand harvesters/planters etc? the big growers are always buying new and discarding kit
